one fun fact is that at the start the chinese didnt like chilli only seeing it as a pretty plant, it wasnt until the Qing’s new taxes on Salt that chilli was used by the lower classes as a replacement for salt in the internal provinces of Sichuan and Guizhou

I used to love getting this dish called “Red Revolution” at a Chinese place that was near my apartment. It was basically fish and mixed seafoods in really spicy hot pot. Absolutely delicious peppery broth, so many whole red peppers in it. I miss that place, shame they got bought out and closed down.
